  • package chopped frozen spinach
  • 2 s olive oil
  • 1/2 ion (chopped)
  • 1 garl clove (chopped (or more to taste))
  • 1 lb grod beef
  • 4 eggs
  1. Mrowave spinach for about 4 minutes and set aside to cool. Meanwhile, in large sauté pan or skillet over medium low heat, heat olive oil. Chop onions and garlic and sauté slowly. Put ground beef in pan and break the meat apart while it browns. While mixture is cooking, squeeze water out of spinach so it is quite dry and, in a separate bowl, beat together the eggs. When meat is still a bit pink, add spinach and mix. Allow to cook a couple of minutes and add eggs, stirring well to blend. Continue to stir until eggs are cooked through. Serves 4.
